For anyone who loves healthy, wholesome food, Bill's has got it spot on.
Taking a tip from the Californian school of thought where it's all about abundance and choice, Bill's will appeal to all foodies and tends to attract Brighton's yummy mummy, Guardian reading types with a taste for fresh, seasonal and locally sourced food.
Best for breakfast or lunch although open until 8pm, Bill's offer the likes of full English breakfasts, steak sandwiches, (ciabbata bread of course) thick, zesty soups such as orange, carrot and ginger, lots of fresh fruit and veg. Salads are imaginative, herby and colourful. Cakes are works of art with sprigs of herbs and flowers sprouting out of them. The fresh fruit and veg is not organic but manages to look like it is.
Whatever they do, Bill's do well-if you order an iced latte it will come to you in a tall glass, loaded with whipped cream, blended with ice cream, dappled with coffee beans. Expect to find a slice of star fruit and a cherry sticking out of your smoothie or a couple of blueberries at the bottom of your cordial.
Service is attentive and friendly and prices are fair.
Be warned: Bill's is always busy. Expect to queue for a table at peak time (usually no more than 20 mins). Great for a weekend treat.
